Pecan Pie Surprise Bars

Ingredients

  • 1 pkg Pillsbury yellow cake mix
  • ½ cups butter or margarine, melted
  • 1 egg
  • 1 cup chopped pecans

Filling:

  • 2/3 cup firmly packed brown sugar
  • ½ cups dark corn syrup
  • 1 teaspoon vanilla extract
  • 3 eggs

Directions

  1. Grease bottom and sides of 13” x 9” baking pan.
  2. Reserve 2/3 cup dry cake mix for filling.
  3. In large mixing bowl, combine remaining dry cake mix, butter and 1 egg; mix until crumbly.
  4. Press in prepared pan.
  5. Bake at 350° oven for 15 – 20 minutes until light golden brown.
  6. Meanwhile prepare filling.
  7. Pour filling over partially baked crust; sprinkle with pecans. Return to oven and bake 30 – 35 minutes until filling is set.
  8. Cool; Cut into 36 bars.
  9. Filling: In large mixer bowl combine all ingredients; beat at medium speed 1 to 2 minutes
