Lemon Squares

Ingredients

  • 1 cup flour sifted
  • ½ cup butter
  • ¼ cup Confectioners’ sugar
  • 2 eggs
  • 1 cup granulated sugar
  • ½ tablespoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons lemon juice

Directions

  1. Heat oven to 350°.
  2. Mix thoroughly flour, butter, and confectioners’ sugar.
  3. Press in ungreased 8”x8”x2” square pan, butter up a ½ inch edge
  4. Bake for 20 minutes.
  5. Beat remaining ingredients about 3 minutes or until lite and fluffy.
  6. Pour over hot crust.
  7. Bake about 25 minutes longer or just until no ??? remaining when touched lightly in center.
  8. Cut into squares.
